Pigmentos vegetales: análisis cualitativo y cuantitativo de propiedades fisicoquímicas empleando Brassica oleracea y dispositivos de telefonía móvil

Resumen

Se obtuvieron extractos acuosos y alcohólicos de col lombarda (Brassica oleracea var. capitata f. rubra) para analizar su cinética de decoloración frente al metabisulfito de sodio y producir acuarelas “medioambientalmente amigables” con buena estabilidad en el tiempo. Las acuarelas se elaboraron con agua, glicerina, goma arábiga y extracto liofilizado. Para el estudio cinético se utilizó un dispositivo móvil con la aplicación Carolina® RGB Colorimeter, que permitió registrar parámetros de color durante la reacción. Los resultados indican una cinética de degradación de primer orden para el extracto alcohólico y de orden cero para el extracto acuoso.
